My Mom discovered this recipe on Pinterest and it has become a go-to sweet treat. This Valentine’s Day, make a light and tasty sweet for your little valentine’s.

You’ll need:

1 large basket of strawberries (15-20 berries)

1 (8-ounce) package of cream cheese

½ cup powdered sugar

1 tsp vanilla extract

an equal number of blueberries as you have strawberries (you could substitute gram crackers)

  • Wash all your fruit
  • Cut the tops (the part with the green stem) off the strawberries so that they can sit upside down on their own
  • Cut an X from the tip down (Be careful not to cut too deep so that the strawberry stays whole)
  • Combine the cream cheese, powdered sugar, and vanilla in a mixer until it is fluffy (It should be the consistency of frosting)
  • Scoop the cheesecake mixture into a pastry bag with a piping tip
  • Gently open up each strawberry and pipe the filling inside the strawberry
  • Top each filled strawberry with a blueberry or crumbled gram cracker crumbs.
  • Place on a platter and chill for about 30 mins.

You can make them ahead. I would feel comfortable keeping them in the fridge (in an airtight container) for 24 hours.

I think these would be great at 4th of July as well!
